I've been a vegan since 1993, but you know, it is sorta a 'there but for the grace of god go I' kind of thing. What if I couldn't buy my fave vegan or whole food ingredients tomorrow? " Here goes: 1 package Mori-Nu tofu (the 12-oz aseptic boxes) 1 1/2 cups dry sweetener (I use turbinado sugar) 1 tbsp vanilla extract 6 tbsp oil 1 cup cocoa powder 2 cups unbleached flour 1 tbsp baking powder 1 cup your choice: blueberries, raspberries, chocolate chips (for the chocoholic in you), nuts Blend tofu, sweetener, vanilla, oil and cocoa powder until mixture is smooth and creamy. In a separate bowl, sift flour and baking powder. Add tofu mixture and blueberries and stir until just mixed (do not overmix). If batter is too dry, add a splash of liquid (Chocolate Silk works for me). Spoon batter into lightly oiled (or nonstick) square pan (I have 9X9, but recipe calls for 8X8) and bake at 350 degrees for 25 minutes. Cool before cutting into squares. Now, I changed the proportions slightly after trying it the first time. My recipe increases everything by half, except for the cocoa powder, which I doubled. Some friends who tried the first batch thought it needed more chocolate. I don't know many vegetarians who crave and lust after meat in that way though, except for missing bacon for the first year. after 15 years though? I liked the way she justified meat eating today by saying it was now healthy and then proceded to say she is enjoying junk burgers! Oh, how our friends would love us to go back to meat eating and tell us how much healthier and happier we seemed! Wouldn't it just make them all feel so much more comfortable! Hmmmmm! Love Shell. I certainly intend to be vegan for the rest of my (hopefully incredibly long) life. I don't know of many vegans who made that decision because they don't like the taste of meat. I will quite happily admit that I used to love the taste of meat - but for me, my reaction to meat is almost Pavlovian now - whenever I see meat, I associate it with how it got there, and if that's not enough to put anyone off eating meat, I don't know what would! They urge their members to write too, as the members are not restricted in their comments on the meat industry.
