As a rule, Tofu is a good binder for cakes. Or use egg replacer powder from HFS. My G/F mum made an awesome chocolate cake that was light and fluffy. She's taken to the challenge. Used basic ingredients. I'll post the recipe if people are interested. My personal favorite are extra fudgy fudge brownies from one of our recipe books (vegan vittals?). Good luck and that's what experiments are for..... evil. At worst, feed it to all those hungry undernourished birds! That's what I do with my bread failures.
