Try dried soya protein. It's cheap and last ages and is good in Lasagna/spag bog. General advise is to take the changes slowly. Were you veggie before? Get some beans and make bean salads or make some humus (my fav!) and spread it on toast.... If you are feeling really adventurous, try making some sushi. Very easy.
