Guest guest
Vegan pies... no problem. For crust: Cut flour with non-hydrogenated margerine, a bit of salt & sugar, and a few drops of ice water... just enough to form it into a ball. Refrigerate before rolling & add more flour as needed. For crumb topping: Make a mixture of any combination of oatmeal, chopped nuts, chopped dates, sugar, cinnamon, flour & non-hydrogenated margerine. (Could also top with granola) For filling: Fruit works well. Just slice or mash & sprinkle with some sort of sweetner... white or brown sugar, brown rice syrup, whatever. For a cream pie I've used tofutti cream cheese, but I'm sure one can use tofu, as well. Just mash & sweeten with fruit & sweetner. I've also used coconut milk which adds great flavor if you're fond of coconut, as I am. Enjoy!Michelle (for Jewish Veg*ns: JVeg/ )
