Hi John I've baked this one the last 2 years and its really good - must admit have used white flour rather than wholewheat, but its really easy to make, oh, and you get to soak the fruit overnight in 250ml wine, so there is still 500ml wine left over - for sipping, while you stir the fruit once in a while - good luck with it Joeann Christmas Cake 250g sultanas 250g raisins 125g currants 250ml white wine 125g margarine 90g raw demerara sugar 45ml molasses 250g wholewheat flour 125ml soya milk 2tbs mixed spice 1. Put all the dried fruit in a bowl, pour the wine over and leave to soak overnight. Stir from time to time to make sure all the fruit is coated 2. Put the margaring and sugar in a large mixing bowl and cream well together before stirring in the molasses, flour, soya milk and mixed spice. 3. Fold in the soaked dried fruit and stir till evenly distributed 4. Line a 23cm (9in) round cake tim with greasproof paper. Pour in the mixture and bake in a cool over (150 C/ 300 F/ gas mark 2) for about 3 hours till a knife inserted in the centre comes out cleanly 5.
