I have two lovely eggplants - not quite at that stage yet - and am wondering what to do with them that's a bit different from my usual. Any further ideas, anyone? Guest guest Posted October 4, 2007 Report Share Posted October 4, 2007 Well wouldn't you know I grabbed the eggplant last night and they had turned. :-( So I made a nice big salad for us with mixed greens of red leaf lettuce, butter lettuce & radicchio, added some walnuts, tomatoes, shaved parmesan and ground pepper. Still haven't managed to get rid of the infection completely, and the antibiotics cause all of the Pepto Bismol symptoms, LOL. I've lost three pounds in four days, but that's the not way you want to go about it! (Though I'm now within 6 lbs of officially not being overweight.) I did have enough energy to make some nice whole-wheat spaghetti with veg meatballs last night, so that's my lunch today. For my evening meal I am making " sea Pie " a wartime vegetarian dish that even my meat eating wife likes... This is a marmite based dish with seasonal vegetables and a steamed wheat flour topping(glutinous/dumpling like " Buddha " meat) though tonight I am making the gluten free version The recipe is online and is a very satisfying winter food!!! Maybe some fried onion on top, too... who says vegans can't eat junk food?! This time of year I also like to make soup - random veg, preferably from the farmers' market if I can get it, boiled up with some stock and then blended a bit. Guest guest Posted December 2, 2009 Report Share Posted December 2, 2009 I ended up skipping the balmoral pie last night as I was too hungry to wait for potatoes to boil and mash and it was either eat a ton of junk whilst I waited, or make something that took less time. So I had the beans and taifun frankfurters mixture on toast instead, and stirred some marmite into it as well. Today I had toast and marmite, tomatoes, radishes, basil tofu and an apple for lunch.
