Guest guest Posted November 17, 2002 Report Share Posted November 17, 2002 3/4 cup couscous 2 tablespoons chopped flat-leaf parsley 2 tablespoons chopped cilantro 2 tablespoons fresh lemon juice 2 teaspoons olive oil 1/2 teaspoon paprika 1/2 tsp. freshly ground black pepper 1/4 teaspoon ground cumin 1/4 teaspoon salt 1 carrot, finely diced 1/2 red bell pepper, seeded and diced 1/2 cup cooked corn kernels 2 tablespoons chopped red onion Cook the couscous according to package directions. In a large bowl, combine the parsley, cilantro, lemon juice, oil, paprika, blackpepper, cumin and salt. Add the couscous, carrot, bell pepper, corn and onion; toss to combine.
