Can be prepared in 45 minutes or less. 3 ripe avocados

2 fresh serrano chilies 3 Tbsp. finely chopped white onion

coarse salt to taste

 

Halve and pit avocados. Scoop flesh into a bowl. Wearing rubber

gloves, finely chop chilies, including seeds if desired, and add to

avocados with onion and salt. Mash mixture with a fork. Guacamole may

be made 2 hours ahead and chilled, its surface covered with plastic

wrap.

Makes 1 1/2 Cups
