1 cup cooked white beans or soybeans, drained

1 medium onion, chopped

1 tablespoon oil (optional)

1 teaspoon nutritional yeast

salt

pepper

soy sauce (optional)

Grind beans in a processor or food mill or mince until fine. Saute

onion in oil (use water or Pam) until well browned. Mix beans, onion

and yeast, and season to taste. If desired, add soy sauce to darken

to a liverlike color. Serve on bread or crackers, or mound onto a

salad plate.

Makes about 2/3 cup; serves 2.
