I'll post a few recipes you can try out on your Hanukkah get- togethers with friends or your family, but they are delicious all year round. I suggest you start up with a warm, hearty vegetable soup, one or two of the latkes and/or meatless burgers with bowls of crispy salads on the side and of course, a lovely cake and some Hanukkah cookies. This replaces the potatoes. . .then add bean flours (garbanzo) and/or some flours like tapioca or sorgum or rice. A touch of salt, some grated onion, and some water if needed to get the binding action of the flours working. Mix and then " fry " on hot griddle. You may wish to add some flax seed gel also if the flours make the product too dry. Another thought it so add some cooked quinoa to the blend for binding (whole grain). What do you think? The eggs can probably be replaced with a starchy flour, flax seed gel, or commercial egg replacer. Feel free to help me out SUGAR and SPICE NOODLE PUDDING 4 ou egg noodles (rice noodles) 2 eggs, beaten ? 2 tbsp butter, melted (spectrum or earth's balance) 1 apple, grated (pear- fighting nasty yeast issue) 1/3 cu sugar (stevia) 1/2 tsp cinnamon 1 1/2 tbsp bread crumbs (GF) SAVORY NOODLE PUDDING 4 ou egg noodles (rice noodles) 2 tbsp butter, melted (spectrum spread) 1/3 cu cottage cheese (I have no idea- can't use soy) 2 eggs, beaten ? salt and pepper Thank you so much. Guest guest Posted November 24, 2002 Report Share Posted November 24, 2002 These two sweet noodle pudding recipes are from Lisa Lewis (Special Diets For Special Kids 1 and 2) and she gave them to me to pass on. They both use eggs, as you can see and the second one will be the hardest as it uses 6 eggs, but maybe if we all work together we can come up with something edible - lol. I am thinking that in the first one, pumpkin might replace one egg (1/2 c pumpkin) and then flax gel (strained for another one). I guess that the whole idea is to make like a custard. Any other thoughts? BL Ingredients: 1/2 lb. Cooked GF noodles 3 Eggs 2 Apples, grated (could use pears) 1/2 Cup Raisins 2/3 Cup Sugar 1 tsp. Cinnamon 1/4 Cup Oil Grease a 9 " x 9 " pan. Combine all ingredients in a bowl and mix very well. Pour into prepared pan and smooth with a knife or the back of a spoon. Bake at 350° 45-60 minutes, just until the top is firm and the edges light brown. VARIATION: Sweet rice Kugel is made by substituting 2-3 Cups cooked rice for the noodles. Sweet Noodle Kugel This recipe works well with rice noodles-use the broadest noodle you can find (probably a fettuccini) and break into short pieces before boiling. I find that Tinkayada® noodles work well with this recipe. Sweet kugel is often served at holiday meals in Jewish homes; it is a side dish rather than a dessert. 1 pound rice noodles, cooked & drained 1 teaspoon cinnamon 6 eggs 2 teaspoons vanilla 1 cup apricot jam 1/2 cup GFCF margarine, melted 1 cup white raisins or dried apricot bits 4 tablespoons sugar 2 teaspoons salt 1 teaspoon sugar In a large bowl, beat the eggs well. Add jam, raisins, salt, cinnamon and vanilla. Mix thoroughly. Stir in noodles. If mixture seems dry, add up to ½ cup water. Pour into a 9 x 13-inch pan, greased. Pour melted margarine on top and sprinkle with cinnamon and sugar mixture. Bake at 375 degrees for 45 minutes. I don't recommend xanthan gum to anyone to replace anything but that's just me. If you need something mucousal to replace the eggs, or part of the eggs, what about slippery elm powder instead and then maybe some extra pectin or gelatin. They've been great ideas! Here's acouple more from me: ~ instead of eggs use a blend liquid (water) or a nut milk with tapioca or cornstarch. If you could use tofu a blend of silken tofu and a starch would be delicious also. ~ instead of cottage cheese: this one has had me thinking for the past day or so. . .without soy it is difficult to come up with a replacement. What about whole tapioca (softened) or large chunks of raw cashews that have been washed and soaked in water to soften? Maybe I can use a baking soda combination as a leavener. I had given up on the sweet pudding. I like the cashew idea a lot. We can't use soy. I did a trial of the apple latkas. I didn;t use any sugar and they were so sweet anyway. My only problem was that they are difficult to flip since they are kind of sticky. I'm not sure what to do about that. Some of the vegan patties are quite sticky also and I find that baking them works better than frying. I know that latkes need " oil " (frying) because of meaning/tradition, but I wonder if you baked them for about20 minutes, turned them to bake the other side if this wouldn't solve the problem. You finish the process by " frying " them briefly after baking if you desired. Navy or Great Northern perhaps. Bean pie taste great, with the sweetener in the pudding, I bet this would be similar.
