Guest guest Posted November 21, 2002 Report Share Posted November 21, 2002 4 cups leeks, cleaned and thinly sliced (white only) 1 tablespoon olive oil 3 cloves garlic crushed 1 tablespoon parsley, chopped 3 eggs beaten 1 tablespoon all-purpose flour (or whole wheat) Salt and freshly ground black Olive oil for pan frying Cut off the bottoms of the leeks and discard. Thinly slice the white part only of the leeks. Rinse and drain well. Discard the dark green tops of the leeks. Heat a large frying pan and add the oil, garlic, and leeks. Saute quickly over high heat for 3 minutes. Remove to a bowl to cool. Add the remaining ingredients to the bowl and mix together. Heat a large nonstick frying pan and add the oil for frying. Measure out 1/2 cup quantities of the fritter muxture and add to the hot pan. Flatten each one slightly and fry over medium heat until golden brown on both sides. (You will have to do this in batches so there is ample room in the frying pan.) Add more oil, if necessary. Remove to drain on paper towels, and serve hot.
