Guest guest Posted July 16, 2003 Report Share Posted July 16, 2003 Hello one and all, As the Director of Foods Services for a kosher senior lunch program, I am constantly challenged to find new foods that incorporate my tendency towards Vegetarian Behavior and the carnivores that are the Older Adults who eat my meals. Tommorow I must give a food demonstration, and I personally have been on the path to find a great rice and bean burrito. Well after trying numberous restaurant offerings, I came home and made my own. Other than my preferred cheese it is Vegetarian friendly and Kosher. 1 packet Carolina Yellow Rice - cook as directed (Star K) 1 16 oz can Goya Black Beans -drained (O/U) 1/4 finely chopped onion 1 small head garlic mashed cumin and chili powder to taste Goya Salsita (my flavor of Choice is Arbol Chiles) (VK-double Aleph) 8 smaller flour tortillas - any kosher band will do kosher cheddar shredded and used to taste (I really like Kraft Mexican Style 4 cheese but alas it is not Kosher) Avocado to taste Sour Cream to taste Salsa to taste (I use Enrico's which is half moon k) While Cooking the rice, saute onion and garlic in a spot of oil when slightly soft add cumin and chili powder, and heat for a few moments until fragrant. Add the black beans and Salsita, and stir gently for a few minutes. Finally add the freshly cooked hot rice and mix. From here it is just assembly. I like to put some of my condiment right on the tortilla. Microwave about 25-30 seconds each, top with more condiments of choice and enjoy.
