Chicago Veggie Cheeseburgers 3 c cooked frozen (not canned!) lima beans, mashed 1 c plain bread crumbs 3 egg whites 1 c fresh spinach or chard, cooked, finely chopped (frozen spinach is okay, but don't substitute canned!) 1/2 c carrots, cooked, chopped 1/2 c green onion, chopped 1 c cheddar cheese (about 4 oz.), shredded 1 tsp salt 1/8 tsp black pepper 2 Tbsp butter 8 whole-wheat buns [A little sauteed garlic or garlic powder if desired] 1) Combine limas, bread crumbs, egg whites, spinach, carrot, onion, Cheddar cheese, salt and pepper in a bowl. Shape into 6 equal patties. Place on a baking sheet. Cover and refrigerate for 2 hours. 2) Heat the butter in a large nonstick skillet. Add burgers; cook 6 minutes, turning over once halfway through cooking. Place burgers in buns and garnish. Source: My version of a recipe by R. J. Grunts (no, I'm not making that up.) *********************************** Stuffingburgers 10 1/2 oz Pkg silken tofu, soft 1 c Walnuts; chopped 1/4 c Sunflower seeds 1/4 c Scallions; chopped 2 Tb Soy sauce 2 Tb Nutritional yeast 1/2 ts Basil 2 c Pepperidge Farm-type herb-seasoned stuffing In a food processor or blender, puree tofu then add rest of ingredients except stuffing. Put stuffing into a bowl and pour tofu mixture over it. Mix well. Form into 8 burger patties and bake on a greased cookie sheet in a 350F oven for 25-30 minutes or until golden brown. (Note: These can be grilled also [ed.--or fried].) Serve on a burger bun with your favorite condiments. NOTE: These can also be formed into 24 meat balls and served with spaghetti sauce over pasta. Zucchini-Cheese Burgers 1 c zucchini, shredded 1/2 c cheddar cheese, diced 2 eggs, beaten 1 sm onion -- chopped 1/2 c crackers, bread crumbs, or herb croutons -- crushed 1/3 c wheat germ Butter or margarine for frying Mix together. Drop by Tbsfull on non-stick skillet in which 1 to 2 Tbs. butter or margarine has been melted. Brown each side about 8 min on medium heat. **************************** JALAPEÑO GRILLBURGERS 1 yellow onion, chopped 1 Roma tomato, chopped 1 jalapeño, seeded and chopped [or more, to taste--or use serranos] 1 clove garlic, minced 1 tsp chili powder 1 16-oz. can kidney beans or small red beans, drained 4-6 Tb barbecue sauce 2 Tb parsley or cilantro, minced 1/3 to 2/3 cup bread crumbs Put onion, tomato, pepper, and garlic in skillet and stir-fry until beginning to caramelize. Stir in chili powder and remove skillet from heat. In a bowl, mash beans. Add onion mixture and barbecue sauce, to taste. Add bread crumbs, enough so the mixture can be formed into patties that hold together.
