Guest guest Posted September 25, 2003 Report Share Posted September 25, 2003 A friend who married into the Persian Jewish community andadopted their culinary traditions with enthusiasm suggests making rice pilaf with carrots and a small proportion of small red beans, topped with pistachios. They use red black-eyed peas (you can hardly see the eye on the red bean)but aduki beans are more commonly available. I don't have a precise recipe. They also make a bean salad with black-eyed peas (red or white) in an olive oil dressing and lots of fresh coriander (chinese parsley) and garlic. I am thinking of making it with three colors of black-eyed white, red and fresh). But now I must get back to work or I wouldn't have time to cook anything for the holiday. Shoshana.
