It's from the Kripalu Cookbook and is a complete protein. Lentils and Bulgur 3/4 cup dried green lentils 2 and 1/4 cups water 1/2 teaspoon salt 1 and 1/2 tablespoons olive oil 1 cup diced onions 1 cup uncooked bulgur 1 and 1/2 tablespoons tamari Wash the lentils. In a medium-sized saucepan, combine the lentils and 1and 3/4 cups of the water and bring to a boil. Reduce heat to medium and cook for 20 minutes. Add the salt and cook for 5 minutes more. (Lentils should be cooked but not mushy). Meanwhile, in a medium-sized skillet, heat the oil and saute the onions for about 20 minutes or until caramelized. Add the remaining water, carmelized onions, bulgur, and tamari to the cooked lentils and return to a boil. Turn off heat. Let stand, covered, for 30 minutes, or until the water is absorbed.
