Guest guest Posted November 20, 2003 Report Share Posted November 20, 2003 This recipe, derived from one of the same name in the Vegetarian Epicure, is one of our favorite soups. It's a Shabbat Lentil soup. CREOLE LENTIL SOUP 1 1/2 c Lentils 2 qt Boiling water 1 1/2 ts Salt 1 med-lrg. Onion, chopped 2-3 Celery stalks with leaves, chopped 1 sm Red (or green) bell pepper, chopped* 3 tb Vegetable oil 1 t Brown sugar 1 ea Bay leaf 4 tb ketchup Pepper Douse the lentils in the boiling water, add the salt & let them stand, covered, for an hour. (Or soak in cold water overnight) Heat the oil in a pot and add the diced vegetables and a bay leaf, and saute for a few minutes before adding it all to the lentils. Cook over a low heat for about 11/2 hours. Mix together the sugar and ketchup. Add a little of the hot soup, stirring well,then return it all to the pot. Grind in some black pepper, heat through, and serve. Serves 6 *Actually, I usually use a carrot because two of my children will only eat peppers when raw. Guest guest Posted November 22, 2003 Report Share Posted November 22, 2003 " Douse " means to pour boiling water over the lentils in a cold pot. Actually, I soak them overnight in cold water. You could also bring them to the a boil, cover and turn off the flame for an hour. The end result of all three methods will be pretty much the same.
