Guest guest Posted November 28, 2003 Report Share Posted November 28, 2003 Sweet Potato and Tomato Soup 1 med. onion, finely chopped 1-2 stalks of celery, finely chopped 1-2 carrots, peeled and finely chopped 2 large or 3 medium sweet potatoes, peeled and diced 1 (800 gr./15 oz.) can of crushed tomatoes Oil for sauting 1 tsp sugar (optional) 1/2 tsp Nutmeg Salt and pepper to taste Saute the onion and celery until the celery is softened, about 10 minutes. Add the carrot and sweet potatoes and saute for 10 more minutes. Add the tomatoes and 1 to 2 cups water and bring to a boil. Lower heat, cover and cook until potatoes are tender, about 30 to 35 minutes. Puree about some or all of the soup. Add nutmeg and sugar (optional) and continue cooking 5 minutes longer.
