Guest guest Posted December 1, 2003 Report Share Posted December 1, 2003 Gypsy Soup Yield: 4 Ingredients 3 tb olive oil; up to 4t 1 chopped onion 3 cloves chopped garlic 2 c sweet potatoes; chopped small 4 stalks chopped celery 3 medium-large fresh tomatoes, chopped small 1 1/2 c cooked chickpeas 3 c water 2 tsp sweet paprika 1 tsp turmeric 1 tsp basil 1 tsp salt 1/4 tsp cinnamon 1/4 tsp (or less)hot paprika 1 bay leaf Instructions In a soup pot, saute onions, garlic, celery and sweet potatoes in olive oil for about five minutes. Add tomatoes, seasonings and the water. Simmer, cover ajar, for fifteen minutes. Add chickpeas. Simmer another 10 minutes or until all the vegetables are as tender as you like them.
