Guest guest Posted January 27, 2004 Report Share Posted January 27, 2004 SOURCE: Redbook Magazine, October 1996 1 can (15-19 oz.) black beans, rinsed and drained 1 can (15-16 oz.) whole kernel corn, drained 1 can (14 and 1/2 oz.) stewed tomatoes 1 cup salsa 12 large corn tortillas 8 oz. pepper jack cheese, shredded (1 cup), I used fat free and low- fat cheddar Heat oven to 350 degrees. Spray a 13 " x9 " x2 " -baking baking dish with vegetable cooking spray. Mix beans, corn, tomatoes, and salsa. Cover bottom of baking dish with 4 tortillas. Spread half of the bean mixture over tortillas. Sprinkle with one third of the cheese. Layer with 4 tortillas, remaining bean mixture, and one third of the cheese. Top with remaining tortillas and cheese. Cover with foil; bake 30 minutes. Remove foil and bake 10 minutes. This slices like lasagne.
