Guest guest Posted February 6, 2004 Report Share Posted February 6, 2004 1 package pitted dates, chopped 2 teaspoons baking soda 2 cups boiling water 2 tablespoons plain Nyafat or margarine or shortening or oil; tastes best with the Nyafat 1-1/2 cups sugar 2 eggs 3 cups flour, sifted 1-teaspoon vanilla 1 cup walnuts, chopped -- (1/2 lb) Preheat oven to 350°F. Cut dates into small pieces if you haven't bought chopped dates. Sprinkle with baking soda. Add boiling water and allow saturating. Cream sugar with Nyafat, add well-beaten eggs and mix thoroughly. Add vanilla. Strain liquid from dates and reserve. Pour dates into egg mixture, add flour, alternating with date liquid, mix thoroughly after each addition. Mix in nuts.
