Hot White Corn Dip ~~~~~~~~~~~~~~ 2 15-oz. cans white corn, drained [ed.--originally called for half white, half yellow, but white's better here.] 1 10-oz. can diced tomatoes with green chiles, drained 1 8-oz. pkg. cream cheese, diced and softened 1/2 tsp chili powder 1/2 tsp garlic powder Chopped fresh parsley or cilantro to taste [Minced ripe serranos or cayennes to taste, or to your guests' taste] Preheat oven to 350 degrees F (175 degrees C). In a medium baking dish, mix all ingredients. Bake in the preheated oven 30 minutes, or until hot and bubbly. Serve with sturdy chips or Wheat Thins.
