Guest guest Posted May 10, 2004 Report Share Posted May 10, 2004 3/4 C cooked spaghetti noodles 2/3 C grated Parmesan cheese, divided 2 eggs, beaten 3 tablespoons butter, melted 2 tablespoons dried parsley 1/2 teaspoon salt 1 C ricotta cheese 2 teaspoons Italian seasoning 1/2 teaspoon salt 1/2 teaspoon black pepper 2 C marinara sauce 1/3 C shredded mozzarella cheese Preheat oven to 350° F. Combine noodles, 1/3 cup Parmesan cheese, eggs, butter, parsley, and salt. Press the mixture on the bottom and up the sides of a large pie plate, to form a crust out of the pasta. In a large bowl mix the ricotta cheese with the remaining Parmesan, the Italian seasoning salt and pepper. Spread the cheese mixture over the spaghetti crust. Pour the marinara sauce over the cheese. Cover the edges of the crust loosely with strips of aluminum foil to prevent over-browning. Bake for about 25 minutes. Remove foil from edges of pie and sprinkle mozzarella cheese over the top of the pie. Return the pie to the oven for about 5 minutes or until cheese has melted and slightly browned.
