Time 30 Minutes :: Cooking Time 15 mins :: Serves 4 Ingredients 1 tbsp vegetable oil 250g packet Quorn mince 1 red pepper, deseeded and sliced 140g green beans, trimmed 6 spring onions, sliced 4 tsp vegetarian red Thai curry paste 400g can coconut milk 1 tsp caster sugar 10-12 fresh basil leaves Seasoning Red chilli slices and damp fried basil leaves to garnish (optional) Thai rice noodles, to serve Cooking Instructions 1. Heat the oil in a pan and add the Quorn mince and stir for 2 minutes. 2. Add the pepper, beans and spring onions and stir-fry for a further 2 minutes. 3. Add the curry paste and coconut milk and bring to the boil. Simmer for 10 minutes, uncovered, until thickened. 4. Stir in the sugar and basil leaves and season with salt and pepper to taste.
