Sallata (wilted lettuce)

A friend shared her mothers recipe with me. It sounds close to what I

remember and I am posting it for anyone interested. A good side dish for

meat or heavy meal....

Fresh dill 3 to 4 cloves garlic 3 young heads lettuce 2Tbsp

pickling salt 4 Tbsp vinegar. Put 1/2 dill and 1/2 garlic in 2 quart

jar. Add washed lettuce. Dissolve salt and vinegar with some warm water

and add to jar. Fill with cold water. shake to mix. Marinate 3 days on

kitchen counter. Refrigerate.

Thank you, Esther! It is the first time ever I came across a recipe

like that, but I am rather curious to try it out.

It is actually pickled lettuce.

This salad really made me curious. I found after all a site with

Medieval recipes and following several links, I finally read

something similar mentioned in the " Lactucis conditis " from " De

honesta voluptate " by Platina (Italy 1475)

Esther, this is more than fascinating, because I think you re-

discovered an almost forgotten original Sephardic recipe!
