Thought I would share it with you all...... 2/3 cup red lentils 1 diced onion 4tsp flour 1/4 cup rice 2 Tbsp vegetable oil 1Tbsp salt sprinkling of black pepper 1/4 diced red sweet pepper 5-6 cups water juice of 1/2 lemon 2Tbsp finely chopped parsley 2 tsp olive oil Wash and drain lentils. Place in large cooking pot with onions, flour,rice, veg. oil, salt and pepper, and red pepper. Mix well. Add water. Stir. Place over high heat and bring to a boil, watching carefully it doesnt overflow. Lower heat very low and simmer, covered, for 45 minutes. Beat with a hand beater for about 2 minutes . Add lemon juice, parsley and olive oil. Can serve over cooked rice, cooked cracked wheat or couscous beads. ( I didnt, but had it as soup and really enjoyed this!) To me this is a new version (with rice and red sweet pepper) and definitely worth a try!
