Beefy Taco Skillet

My husband and I loved this (couldn't get my 2 1/2 year old to try it of

course). We added the cheese and sour cream, but could definately be vegan.

 

1 Tbsp olive oil

1 onion

2 cups frozen ground beef substitute crumbles

1 1/2 cups of water

1 envelope taco seasoning

1 cup chunky salsa

1 cup frozen corn

1 1/2 cups uncooked instant rice

1 cup shredded taco cheese

1 cup shredded lettuce

1 tomato

sour cream

 

in 10 " skillet, heat olive oil and add onion. Cook and stir until onion is

tender. Add " beef " and cook 2-3 minutes longer. Stir in water, taco seasoning

mix, salsa, and corn (I used the taco/burrito " meat " , so I didn't add the

taco seasoning). Heat to boiling, stirring frequently. Then stir in rice.

Boil

1 minute, then remove from heat, cover, and let stand again for 8 minutes.

 

Fluff mixture with a fork, then sprinkle with cheese. Cover again and let

stand for 2 minutes until cheese melts. Sprinkle lettuce and tomato over

skillet mixture. Top with sour cream.

Great idea. My grocery store doesn't carry a kosher taco seasoning, so I

have to go to another store to get it.

If you want to save some money, do as I do and use a teaspoon of
