Polish Style Lasagna

I got this recipe off the internet (that is where I got the Beefy Taco

skillet recipe too). It is like a huge pierogie.

 

9 uncooked lasagna noodles

1 onion

1/2 cup butter (I used much less)

2 2/3 cups dry potato flakes

1 8 oz pkg cream cheese

 

1. Preheat oven to 350

2. Cook lasagna noodles according to directions. drain and pat dry noodles

and spray with cooking spray or lightly oil so they don't stick

3. Saute onions and butter for 5 min

4. Prepare mashed potatos; but, omit the milk. Stir in cream cheese until

well blended (was very very thick so I added some soy milk)

5. Place 3 noodles in the bottom of a lightly oiled 9x13 pan baking dish.

Spread 1/2 the potato mixture over the noodles (this was VERY hard. I ended up

kind of taking a little bit at a time and pressing in over the noodles). Top

this with 3 more noodles, followed by the other 1/2 of potato mixture.

Finish by topping with remaining 3 noodles, then top witht the onions.

6. bake at 350 for 20 min or until bubbly. Allow to cool 5 min. before

eating.

Thank you for the recipes, Tricia! Especially this one sounds

interesting with the combination of potatoes and pasta.

I assume one could use home made mashed potatoes as well.

I still have some mashed potatoes left from yesterday in the fridge

and was thinking of making some corn-tarragon-potato patties, but the

lasagne recipe comes in very handy.

Now, what is wrong with corn-tarragon-potato patties?? blink-blink..

What do you do with left-over mash?

I never throw away anything that is more than one portion (in the

pot, not left on the plate to prevent more drooling)
