Guest guest Posted August 15, 2004 Report Share Posted August 15, 2004 a nice recipe for hot days enjoy Eliane in Amsterdam Cold cucumber soup yield 4 pers time 15 min. joules/kal. p.p 473/113 this recipe comes from an old Annabelle/femina, which was or maybe still is an interesting women' magazine. must be at least 20 years old. 500 gr. cucumbers 100 gr. yogurt 1 TBsp Sour cream 1 dl. cream 2 TBsp. Dill. salt and pepper peel the cucumber, cut them in length and take the seeds out with a spoon. put them in a colander. with a wooden spoon put " meat " through the colander, that only the seeds remain. Cut the cucumbers in cubes and put together with the yogurt in the blender. blend until smooth, add Dill, sour cream, cream and mix again, then season with salt and pepper. Put in the fridge to cool.
