Guest guest
I found this delicious recipe on " Soup Song " (http://www.soupsong.com) and modified it only a bit. They claim that it is a traditional Rosh Hashanah dish. Can someone confirm? Shoshana Moroccan Pumpkin And Split Pea Soup (Mark del Gara'a) 1 1/4 cups yellow split peas, soaked abd drained 1 large onion, chopped 8 cups water 1/4 cup olive oil 1 teaspoon cinnamon 1 teaspoon ground ginger 6 cups peeled, seeded, and cubed pumpkin salt and pepper to taste Optional Garnish: minced parsley Hot the oil in a large pot, saute the onion until soft, add the water and peas, bring to a boil, reduce heat and simmer, partially covered, for 30-40 minutes. Stir in the cinnamon, ginger and pumpkin. Bring to a boil, reduce heat, and simmer partially covered for about an hour, stirring occasionally. The squash will begin to fall apart and the peas will be tender. Mash a bit, if you wish. Season to taste with salt and pepper. Ladle into bowls. Garnish each portion with minced parsley.
