Guest guest Posted October 29, 2004 Report Share Posted October 29, 2004 Dear all, As being back to phase I finally (today is the 4th day) I want to share a beautiful recipe I found on the net. It comes from www.3fatchicks.com and it is called chicken and lentil stew. I made it with Tofu and parve bouillon granules. It is for 5 servings 1 pound cooked skinless, boneless chicken breast (chopped into bite size chunks) I used Tofu 1 large onion, halved and slices (I cut it in small pieces) 8 oz sliced fresh mushrooms 1 medium yellow, red, or green sweet pepper cut into strips 1 clove garlic, minced 2 Tbs. olive oil 4 cups water 2 cups shreeded cabbage 1 cup dry lentils, rinsed and drained 2 Tbs. rice vinegar (I used Balsalmico) 1 Tbs. Splenda 2 tsp. instant chicken bouillon granules (I used veg. soup powder) Ground pepper and salt to tast. (I added 1 tsp curry pasta) In a large pot cook chicken, onion, mushrooms, sweet pepper and garlic in hot oil for 5 min. or until vegetables are just tender. Add water cabbage,lentils, vinegar, sugar, bouillon granules, salt and Pepper. Brinmg to boil, reduce heat. cover and simmer for 15 to 20 min. or until vegetables and lentils are tender. ladle into warmed bowls. I hope you will enjoy it as much as we did ! Splenda is one of those products made from sugar alcohols and which can cause users to have GI upset, diarhhea, flatulance, etc. If you are looking for a sweetener that is not sugar, why not think about stevia.
