Guest guest Posted November 27, 2004 Report Share Posted November 27, 2004 I haven't eaten at the Olive Garden, so cannot compare my own recipe to it, but here's a quick and yummy vegetarian minestrone recipe I made last week. Veggie Minestrone 4 cups V8 juice or tomato juice, low sodium 4 cups water 1 Tbs olive oil 1/2 onion, diced 3 cloves garlic, minced 3 carrots, medium, chopped 1 cup butternut squash, cubed 1 cup fresh green beans, trimmed, cut 1 zucchini, medium, halved lengthwise, sliced into half moons 1 (14.5 oz) can beans: Northern white, or chick peas, drained, rinsed 2 tsp Italian Herbs (oregano/thyme/basil/marjoram) pinch salt 1/2 tsp ground pepper 1/2 tsp spice (cumin, curry or red pepper), to taste dash balsamic vinegar, to taste Heat a soup kettle on medium heat and saute the onion in olive oil until transparent. Add the rest of the ingredients and stir. Cover and bring to a high simmer; reduce heat to simmer the soup for about 45 minutes until the vegetables are tender-crisp. Taste for seasoning adjustments. This soup tastes better the second day, as the flavors mingle and develop. Servings: 6 Recipe by Karri Ann. Enjoy!
