Guest guest Posted December 6, 2004 Report Share Posted December 6, 2004 Sweet Potato Latkes 1 lb sweet potatoes, peeled and coarsely grated 1 inch grated ginger root 1/3 cup cornstarch (or flour) 2 large eggs, lightly beaten 1/2 teaspoon sea salt 1/2 teaspoon black pepper pinch nutmeg 3/4 cup vegetable oil or peanut oil, for frying *Sometimes I also add a good dash of curry powder, and some grated apple. In a mixing bowl, stir together the grated potatoes, ginger, cornstarch, eggs, salt, pepper and nutmeg. Heat the oil (on medium-high heat) in a deep large nonstick skillet. Working in batches, drop about 1/8 cup potato mixture for each latke into the hot oil. Flatten a bit with a slotted spatula. Reduce the heat to medium and cook the latkes until they are golden (about 1 1/2 to 2 minutes per side). Transfer the latkes with a slotted spatula to paper towels and drain. Serves 5 to 6. Enjoy!
