Along with that are some Japanese eggplants, a red onion, and several green bell peppers. I chopped them into big chunks, tossed them with good olive oil, salt, and pepper, and put them on a cookie sheet in a single layer. The oven's on 400F, and in a half-hour or so, it will be perfect for having with some good bread (we have some crusty olive bread). Guest guest Posted November 15, 2005 Report Share Posted November 15, 2005 Hi i was just going thro' the old msgs and i thought perhaps i cud share how we in india cook the roasted eggplant Smear a big eggplant with oil (olive or sunflower) give it few jabs with a knife and roast it on a gas burner till its completly cooked in the inside chop 2 onions, 3 to 4 garlic, 1 or 2 green chillies, couple of tomatoes and one green bell pepper. Heat oil about 11/2 tbsp and put in 1/2 tsp of cumin seeds and wen it gives out a nice aroma (not blackened)add the onion garlic and green chiilies. Saute till brown . Add the cooked brinjal after carefully removing the skin and mashing it. Add salt 1/4 tsp of turmeric powder, 1/2 of garam masala 1/4 tsp of cumin powder and saute futher. After 3 to 4 min add the chopped tomatoes and cook till the tomatoes are softened up. Squeeze 1/2 a lime and garnish with parsely or ciltrano.
