I am a strict vegetarian, and I would like to know if I can

substitute vegetable broth for chicken broth in traditional Jewish

cuisine. Could someone help me out here?

Sure, I do it all the time. The subsitution may also lower the fat

content, which is also a goo thing.

I agree too. Our family also strives to be vegetarian and use vegetable broth

in place of chicken stock all the time. (Imagine Foods makes a vegetable based

chicken like stock that works well if you need a commercial variety).
