Use the dimple to pick a tastier eggplant. These dimples, located at the blossom end of the eggplant, can be elongated or oval. The shallow, oval indents seem to indicate fewer seeds, a meatier flesh, and a less bitter flavor in general. Smaller eggplants tend to be less bitter as well.
