*Cooking Tip*

The eggplant is a member of the nightshade family - it's related to the

potato and tomato - and is actually a fruit (specifically a berry), not

a vegetable. Use the dimple to pick a tastier eggplant. These dimples,

located at the blossom end of the eggplant, can be elongated or oval.

The shallow, oval indents seem to indicate fewer seeds, a meatier flesh,

and a less bitter flavor in general. Smaller eggplants tend to be less

bitter as well. Freshness is important, so use within a few days of

purchase or harvest.
