Guest guest
I am confused. Why am I seeing posts about fish? Isn't this a vegetarian list. Fish are animals, not plants! If someone HAS to have fish, here are a couple of faux fish recipes: Faux Fish Cakes (recipe courtesy of Chef Randy Holman) 1 lb. (450 g) extra-firm tofu 2 cups (200g) cooked brown rice 1 small onion, minced 6 Tbsp. nutritional yeast flakes 2 Tbsp. minced celery 2-1/2 Tbsp. soy sauce 1 Tbsp. lemon juice 1 Tbsp. sea salt 1/2 tsp. dry mustard 1/2 tsp. dill weed 1/4 tsp. white pepper Pinch celery seed 1/4 cup (4 Tbsp.) unbleached all-purpose flour Mix the tofu, rice, onion, yeast and celery in a large bowl. Process the = remaining ingredients, except for the flour, in a food processor until = well blended. Add to the tofu mixture, along with the flour. Mix well. = Form into 4-oz. (100 g) patties and broil or pan fry for about 4 minutes = on each side. Makes 8 servings. Sensational ================ Baked Gefilte Patties Adapted from " The Jewish Vegetarian " *, March 1998 issue (I added the kelp powder) *official journal of the Jewish Vegetarian and Ecological Society, international parent organization of JVNA, Jewish Vegetarians of North America 3 medium potatoes, peeled 2 medium onions, finely chopped vegetable oil for frying 1 large eggplant/aubergine 2 cloves garlic, crushed/minced 2 tbs fresh parsley sea salt freshly ground black pepper and paprika kelp powder (available at health food stores) matzoh meal horseradish Preheat oven to 425 Top and tail eggplant, slice in half lengthwise, sprinkle cut side with oil Place on greased baking dish, cut side down. Prick skin with a fork in several places. Bake until skin starts to shrivel and insides are soft (about 30 minutes). Let cool and scoop out insides. While eggplant is roasting: Boil or steam potatoes until tender; put aside Brown onions in a little oil until golden brown --------- Reduce oven heat to 350 Mash the potatoes. Add the cooked onion, eggplant flesh, garlic, parsley Season to taste with sea salt, pepper, paprika and kelp powder. Mix in sufficient matzo meal to make a firm (but not hard) consistency. Oil a baking sheet. Wet your hands and make oval patties from the mixture. Place them on the baking sheet. Sprinkle each one with a little oil. Bake About 30 minutes until golden brown.
