I made it last Friday and it was a huge success, so I repeated it today (more or less). I give the recipe as it appeared. Of course, it is not Torah from Sinai. 1 eggplant, peeled, cut into 1/4 inch slices 1 egg 2 tb milk 1 cup dry bread crumbs or matzo meal spaghetti sauce mozzarella, shredded parmesan, grated In shallow bowl, beat egg with milk. Spread bread crumbs in shallow plate. Dip eggplant slices into egg mixture, then into crumbs to coat well. Arrange half of the eggplant in 10-inch microwaveable plate lined with paper towels. Microwave, uncovered, at high for about 4 minutes or until tender, rearranging slices once halfway through cooking time. Repeat with remaining eggplant slices. Cover microwaveable 8-inch square dish with spaghetti sauce. Layer half of eggplant slices, cover with shredded mozzarella and spaghetti sauce. Repeat layers. Sprinkle with parmesan. Microwave, covered at high for about 4 minutes or just until hot. Rotate dish. Microwave at medium (50%) for 10 minutes or until hot and bubbling, rotating dish once halfway through cooking time. Let stand covered, for 5 minutes. I hope you like the recipe. As I said, I did not follow the directions exactly. First of all, because I am not going to convert inches to centimetres, so I made the slices to my own idea. And then I did not put the eggplant in a 8-inch square dish.
