Shoshana Veggie burgers or loaf These are very inexpensive and easy. The basic recipe is not strongly flavored so you can adjust it to your taste. 1 cup green lentils 3/4 cup whole barley 1 t salt 1 cup bread crumbs 1 clove garlic, minced 1 medium onion, diced 1 stalk celery, diced 2 eggs, beaten 1/4 t numeg. Rinse and inspect the lentils and barley. Cook together in plenty of water until soft (about 45 minutes). If you soak them overnight, they'll cook in much less time. Add salt towards the end of the cooking time. Drain. Mix in the remaining ingredients. Form into patties or place into a well oiled loaf pan. The loaf cooks in 35 minutes in a preheated 180oC oven and should stand for 10 minutes before you turn it out. The burgers are best fried but I usually baked them. You can also form small balls, bake them and serve with spaghetti and tomato sauce. The basic principle of mixing cooked beans and whole grains (to form complete protein) can be expanded into a wide variety of burger type creations. Beans will cook softer if you wait to add the salt until they are nearly done. Larger beans need to be mashed. The highest protein combo is probably soybeans and brown rice or bulgar. I mash the two together and then make burgers (as above or generally improvising -- adding tomato paste and paprika adds flavor and a meaty color) or spread the mixture in a large, flat baking pan, bake in a medium-low oven, cool, crumble and use a general ground meat substitute. Buckwheat burgers 1 cup of buckwheat 1 onion, finely chopped ¼ cup shelled sunflower seed ½ cup whole wheat flour 1 beaten egg finely chopped parsley or dill finely chopped carrot, celery or zucchini 2 Tbls soy sauce or 1 tsp salt Breadcrumbs Cook the buckwheat in two cups of water and let it cool until you can handle it easily. Saute onions, sunflower seeds and vegetables for a few minutes Beat the egg and combine all of the ingredients, adding enough breadcrumbs to make it all stick together. Form into patties and pan fry on both sides or bake in a medium oven. Serve with techina, ketchup or salsa.
