Toasted Coconut Tapioca Combine and let stand for 5 minutes: 3/4 cup light coconut milk [i do not know if the can contains light or not coconut milk] 3/4 cup fat free milk 3 tablespoons sugar dash of salt 4 teaspoons uncooked quick cooking tapioca 2 tablespoons egg substitute [i used one egg] Bring to boil over medium-high heat, stirring constantly [very important, otherwise your pot will be burnt, like mine]. Remove from heat, add 1/4 teaspoon vanilla extract. Divide into 2 bowls [i disobeyed and put in one bowl], cover and chill till thick. Sprinkle with toasted coconut Hope you will like it!
