Guest guest
Shalom everyone, Thought I would share my hharóset recipe with you (see below) -- it is pretty typically Western Sephardi (Spanish and Portuguese), with raisins and apples and all. It does, however NOT have almonds or other tree nuts that many of us are allergic to. Instead, it calls for pine kernels (also called " pine nuts " ) -- a " nut " that comes from a pine tree and is completely unrelated to the tree nuts that so many are allergic to. (Some people may of course be allergic to these too, in which case sunflower seeds can be substituted.) NOTE: If you are planning to serve this hharóset to someone who actually has a nut allergy, please do make sure you don't get pine kernels that have been packed on equipment also used for tree nuts. Look for trace warnings on the package... Buenas entradas de Sabá! / Shabbat shalom! and MO'ADIM LESIMHHA!!! (The traditional Sephardi Passover greeting) -Olve Western Sephardi Hharóset -- recipe adapted for nut allergies by Olve Process 1: ---------- 1 cups figs (unsulphured mission figs are good) 1 cups raisins 1 cup orange juice 1 cup red wine Cut the hard tops of the figs and discard. Cut the figs in smallish pieces. Add raisins, orange juice and wine. Let soak for ca 1 hour (longer is fine). Cook for a few minutes. Process 2: ---------- 1-2 cups raw (not roasted) pine kernels (or sunflower seeds) 3 tbsp cinnamon Grind seeds or chop very finely. Add cinnamon, mix well. Process 3: ---------- 2 apples 1 pear Discard seeds and stems, leave peel on. Chop finely. Process 4: ---------- Mix result of processes 1 through 3. Chop with rolling knife or put in blender / food processor until result resembles slightly chunky paste that you can shape into balls or the like. Put in glass jar and let cool off in fridge until needed. Serving: -------- May be shaped into olive-sized balls (traditional Iberian Sephardic) or shaped into a pyramid for added visual effects... :-) ___________________ Olve Utne http://utne.nvg.org
