" official journal of the Jewish Vegetarian and Ecological Society. 3 medium potatoes, peeled 2 medium onions, finely chopped vegetable oil for frying 1 large eggplant/aubergine 2 cloves garlic, crushed/minced 2 tbs fresh parsley sea salt freshly ground black pepper and paprika kelp powder (available at health food stores) matzoh meal horseradish Preheat oven to 425 Top and tail eggplant, slice in half lengthwise, sprinkle cut side with oil Place on greased baking dish, cut side down. Prick skin with a fork in several places. Bake until skin starts to shrivel and insides are soft (about 30 minutes). Let cool and scoop out insides. While eggplant is roasting, boil or steam potatoes until tender; put aside. Brown onions in a little oil until golden brown --------- Reduce oven heat to 350 Mash the potatoes. Add the cooked onion, eggplant flesh, garlic and parsley. Season to taste with sea salt, pepper, paprika and kelp powder. Mix in sufficient matzo meal to make a firm (but not hard) consistency. Oil a baking sheet. Wet your hands and make oval patties from the mixture. Place them on the baking sheet. Sprinkle each one with a little oil. Bake About 30 minutes until golden brown.
