With Rosh Hashana right around the corner, I thought I'd share my

tsimmis recipe. It's vegetarian and sweetened only with dried fruit.

Tsimmis

1 c. prunes (about 30)

water

3 med. sweet potatoes

2 med. carrots

50 g. butter (3-4 T.)

10 dates, chopped

Steam prunes over water. Pit (if unpitted) and set aside. Steam sweet

potatoes about 10 min. Slice carrots and add to potatoes; continue

steaming 5 minutes more. Meanwhile, combine softened butter and dates in a

small cup. Bring steaming water back to a boil and pour over dates; let

sit until cool. Mix all ingredients in 1 1/2 qt. casserole. Bake 15 min.
