I was hoping for something fab to make for Shabbat supper tomorrow night! now it is Shabbat already in some areas of the world... I, my part it is only Thursday night. The really big pain of my attempt to be vegetarian is how do I get enough protein while keeping carbs properly low ? " A number of medical and nutritional experts agree that the problem is too much protein in the SAD diet (Standard American Diet), rather than too little in a vegetarian one. You can check this out yourself by reading articles or books by John Robbins, or by Dr. Neal Barnard (or any of the other PCRM, Physicians Committee for Responsible Medicine) medical doctors. All of the essential amino acids can be obtained from plant foods. Just make sure you get a good variety. No one believes in protein pairing anymore. You really don't need to be paranoid about protein. These plant sources have the most protein: soy foods (examples tofu, tempeh, miso, soymilk), sprouted seeds (each type of sprout has differing proportions of nutrients and so it is best to eat a variety of them), whole grains (amaranth and quinoa are highest in protein and are high quality proteins), nuts, beans & legumes, dark leafy greens, spirilina and chorella-blue green algae. If your energy level is low, try upping whole grains.
