Guest guest Posted March 23, 2006 Report Share Posted March 23, 2006 We tried a lot of different veggie chopped liver, and my husband didn't like any of them, so I devised this, which he loves: K Chopped Liver 4 hardboiled eggs, chopped 3 Tbs. butter 1 onion, chopped 1 10 oz pkg. sliced mushrooms vegetable broth (about 2 tbs.) Salt to taste Melt the butter in a saute pan and saute the onion until it's soft & golden. Add the mushrooms & saute until they are brown & juicy. Let it cool a bit. Put the eggs, onions & mushrooms in a food processor and puree, slowly adding the broth to get the desired consistency. Salt to taste & serve chilled.
