As one good deed deserves another here are a few of mine that I had typed up in my computer. Some of them include weight watcher point value for those interested. Linda Keehn Cauliflower Kugel 1/8th = 1 point 2 heads cauliflower (cut up and cooked until soft) 2 chopped onions 1 box mushrooms (sliced) 3 eggs or ¾ Cup egg substitute ¼ cup matzo meal 1 tablespoon onion soup mix Cook cauliflower, saute onions and in sprayed pan until onions are soft and slightly brown, add mushrooms and saute another 2 min. mix all other ingredients together and add vegetables. Bake in 9 x 13 pan at 350 for about 1 hour until firm and slightly brown on top. Apple Kugel 1/8th = 3 ½ points 6 Apples peeled cored and quartered 2 eggs 6 egg whites 1 Cup orange juice 1 Cup matzo meal ½ teaspoon cinnamon ½ cup sugar ¼ Cup applesauce Mix ingredients together and bake in a sprayed pan at 350 for 1 hour. Note: the original recipe called for ¼ cup oil, 5 whole eggs and ¼ cup nuts. I omitted the nuts and substituted applesauce for the oil and some egg whites for the whole eggs to lower the points. My family did not notice the difference. Butternut squash kugel 1/8th = 2 pts 3 boxes butternut squash (2 lbs fresh) 6 egg whites or ½ cup egg beaters ½ Cup sugar 1 Teaspoon vanilla sugar 2 Tablespoon margarine (melted) ¼ Cup Creamer (fat free) ¼ Cup Cake Meal (matzo meal or potato starch) Combine all ingredients except margarine; mix Add margarine pour into 10†round baking pan. Bake 1 hour at 350 degrees Cheesecake Crust 8-10 graham crackers (crushed) I use macaroons for Peasach, could use Passover cookies ½ stick margarine or butter (Soften at room temperature) Cake 4 packages cream cheese (leave at room temperature to soften) 6 eggs 2 Cups Sugar 2 Cups sour cream 2 Teaspoons Vanilla Preheat oven to 375 Mix crackers, macaroons or cookie crumbs and margarine or butter, press into the bottom of 12†Springform pan. Mix cheesecake ingredients in mixer until smooth, Bake at 375 for 45 minutes and let cool in oven. DO NOT OPEN OVEN UNTIL CAKE IS COOLED AT LEAST 1 HOUR AFTER BAKING.
