Dear N'omi,

I don't know which book of Lorna Sas this is in, but this recipe is fantastic! I

do thing from my head and based on how it taste:-), so you have to adjust

ingredients

 

 

Silken tofu (make it out of 2 packages, it is that good)

A lot of cocoa--start with about half a cup

maple syrup

vanilla

Grand Marnier (or similar tasting liquor)

 

Blend and put it in the nice glasses with strawberry, and other fresh fruit.

Better than any chocolate I ever had. It should be very " chocolaty " , that's why

you want to put a lot of cocoa in it. If you make this your guests would never

guess this is tofu.

My only disclamer here is that I really don't know how much of what you should

add so you really need to rely on your palate.

Lorna Sas books are great.

2 12.3 oz packages lite silken tofu

2 medium bananas

1 1/2 tablespoons lemon juice

1/3 cup unsweetened cocoa

plus

2 tablespoons unsweetened cocoa

1/2 cup honey -- was 1 cup liquid fruitsource

2 tablespoons vanilla extract

 

Place tofu in food processor and blend. Break banana into pieces and

add to the tofu with the lemon juice.

 

Place cocoa in a medium bowl. Place honey in a glass measuring cup

and microwave for 60 seconds or until hot--be careful not to let it

boil over. Or heat in a saucepan for 2 minutes over medium-low heat.

Whisk hot honey into cocoa powder and add to tofu mixture allong with

vanilla; blend. Pour into a 2-quart bowl, cover, and refrigerate at

least 1 hour (best to allow flavors to develop overnight). Serve with

Hip Whip.

Apricot Mousse

3 cups dried apricots -- packed, soaked in hot water

1/2 hour and thoroughly drained

1 pound silken tofu -- thoroughly drained and dry.

1/4 cup vegetable oil

1/4 cup apricot brandy -- apricot

juice of 1 lemon.

1 tablespoon lemon zest

4 egg whites

1/4 cup sugar

 

Process apricots till perfectly smooth in food processor. With motor

running, add tofu and oil and cream till very smooth. Add brandy,

juice and zest and cream. Pour mixture into a bowl. Beat the egg

whites with the sugar until stiff peaks form. Fold into mixture very

gently. Refrigerate till set, 4 to 6 hours.

12 ounces chocolate chips

1 teaspoon vanilla

 

Melt chocolate chips. In a food processor, process the tofu until it

is quite liquid. Add the melted chocolate and vanilla, if using, and

process just to mix. Refrigerate until well chilled.

 

Note: It can be mad a day ahead, but I am not sure about 2 days. It

is, however, very fast to make, so , perhaps you could make it closer

to the use day.

1 pound soft tofu

3/4 cup cocoa powder

6 tablespoons sugar

1/2 cup 1 % soy milk

GRAHAM CRACKER CRUST:

1 cup graham cracker crumbs -- (about 16 squares)

2 tablespoons splenda or sugar

1 tablespoon margarine

1 tablespoon canola oil

2 tablespoons egg white

 

 

Preheat oven to 350F coat pie pan with oil spray. Combine crumbs,

sweetener in a small bowl or processor. Add margarine and oil, stir

or process briefly. Add egg white and stir well or pulse. Pour

crumb mixture into pie plate and spread with back of a spoon, fingers

or plastic to cover bottom and sides of pan. Bake 8-10 mins, cool.

 

Combine all the mousse ingredients in a blender or food processor and

puree until creamy. Pour the mousse into pie shell or six individual

dessert bowls and chill.

20 ounces Mori-nu Lite Tofu -- (2 10-ounce packages)

1 dash nutmeg

2 medium bananas -- sliced

1 kiwi fruit -- sliced, for garnish

 

This is not a Japanese recipe, but an easy pudding made of silken tofu

seems a light and appropriate finish to this meal.

 

Combine the chocolate syrup, silken tofu, and nutmeg in a food

processor. Process until velvety smooth. Divide half the pudding

among 6 dessert cups. Top with a layer of sliced bananas followed by

the remaining pudding. Garnish each serving with a slice of

kiwifruit. Chill until needed.

1 1/2 pounds Mori-nu Lite Tofu

1 1/2 cups powdered sugar

6 whole strawberries -- for garnish

 

In a food processor, puree the strawberries until they reach a thick,

liquid consistency. Add the tofu and blend until fully combined.

 

Add the powdered sugar; blend until smooth.

 

Pour the mixture into an airtight container and chill for 2 hours or

overnight. Serve in individual dessert dishes and garnish with whole

strawberries.

" The refreshing berry flavor of this mousse is a wonderful finish to

a summer meal. The mousse also works great as a topping for cakes and

quick breads. "

This is a quick recipe that my daughter loves

 

BBQ tofu

 

1 block firm or extra firm tofu

2T oil

1 large onion sliced

1/2 C bar b que sauce

 

Slice tofu place 2 layers of paper towels on a plate, cover tofu with

another 2 layers of paper towels and another plate. weigh down the top plate

and

let tofu drain between paper towels.

 

Slice onion and saute until soften 1 T oil remove onions. Add 2nd

Tablespoon oil and brown tofu on both sides. Add BBQ sauce to pan and onions

cook 3 -

5 minutes and serve with rice or on rolls topped with onions and a fresh

vegetable.

Here is a good tofu salad/mock egg salad recipe:

 

 

 

Eggless Egg and Garden Veggie Salad

1 pound firm tofu, patted dry

1/2 cup soy mayonnaise

1-1/2 teaspoons lemon juice

1 teaspoon onion powder

3/4 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon turmeric

1/8 teaspoon freshly ground black pepper

1/2 cup carrots, shredded

1/2 cup red bell pepper, diced

1/2 cup celery, diced

1/4 cup green onions, sliced

1/4 cup freshly chopped parsley

 

Wrap the block of tofu in a clean, lint-free towel, place in a colander, and

balance a large plate over the top of it. Place a large can or something

heavy on top of the plate and leave the tofu to sit for 30 minutes (be sure

to put the colander in the sink or place a bowl beneath it to catch the

excess water). This pressing technique makes the texture of the tofu much

firmer. When done, use your fingers to crumble the pressed tofu into a bowl.

Add the soy mayonnaise, lemon juice, onion powder, garlic powder, salt,

turmeric, and pepper, and stir well to thoroughly coat the tofu. Add the

carrots, red pepper, celery, green onions, and parsley, and stir well to

combine. Cover and chill for 1 hour to allow the flavors to blend. The color

of the eggless egg salad will turn more yellow as it chills.
