Guest guest Posted January 4, 2007 Report Share Posted January 4, 2007 It's easy to make your own. I use this when I do a cashew and mushroom loaf. It's dairy. Mushroom and Sherry Sauce..makes 1 ¼ pints 1 oz butter 8oz mushrooms, wipes and quartered 1 tbsp sherry 4 tsp flour 1 pint strong vegetable stock Salt and freshly ground black pepper Melt the butter in a saucepan and add the mushrooms and sherry. Cover and cook for 2-3 minutes on a high heat. Uncover and continue to cook until the liquid evaporates, stirring constantly, so that the mushrooms are well browned. Reduce the heat, add the flour and cook it thoroughly for 5-6 minutes, stirring all the time Add the stock a little at a time, stirring constantly to prevent lumps forming. Simmer for 3-5 minutes and then season to taste. Let the sauce cool slightly, then liquidise until it is smooth. This is great over mashed potatoes: Savory Mushroom Gravy 2 huge onions ( grapefruit size) 1 1/2 cups sliced crimini mushrooms 1 cup dried shittake mushrooms ( rehydrated) 1/4 cup ghee (or butter or margarine (earth balance is great) or olive oil) 1/4 cup olive oil 15 cloves garlic 1 quart, more or less of water 1-2 tsp. black pepper 1 tsp. sage 1 tsp. thyme 1 tsp. rosemary 1 tsp. ground cumin 1 Tbsp. ww flour soy sauce to taste Saute onions and mushrooms and garlic in oil and ghee until brown. Ingredients: - 4 tbsp margrine or shorting - 2 tbsp of flour - 2 cups vegetable broth Directions: Melt the 4 tbsp of margrine or shorting. Add 2 tbsp flour, stirring until smooth. Here is one recipe that might help: Vegetarian gravy 2 tablespoons olive oil 1/3 cup minced onion 1 1/2 cup vegetable broth or water 1/2 teaspoon rubbed sage 2 tablespoons low sodium soy sauce 1/4 teaspoon black pepper 2 tablespoons corn starch Preparation: Heat the oil in a pan and sauté the onions until transparent. Add the sage, 1/2 of the broth or water, soy sauce and pepper. Bring to a rolling boil. In a cup add other half of the broth and stir in the corn starch. Now whisk this mixture into the boiling pan and thicken as desired. Taste and adjust salt if needed. Guest guest Posted January 4, 2007 Report Share Posted January 4, 2007 I always make my own starting with vegetarian veggie broth or sometimes I use mushroom broth. I alwasy cook some fresh veggies you know the typical soup veggies. Then I reduce, run the whole thing through the food processor and then add flour and adjust the seasoning. If using the vegetable base I often add a bit of soy for color. Anyway my daughter always goes back for seconds on potatoes and gravy and she is very particular!!1 She calls the rest of us Meat mouths and will nto even share a drink with us if we have been eating meat.
