I am new to the group, live in Australia and must admit that I am a

terrible cook. I would appreciate some ideas to make a creative

vegetable soup apart from the same old vegies of potatoes, peas, corn,

carrots etc with onions. Shabbat soup is no longer wanted by my

children! Help.....Bernie

Sorry about the chicken stock in one of the recipes I sent. I use water and

it's just fine.

This is definitely different, and really yummy:

 

ZUCCHINI AND HOMINY SOUP

(Serves 8)

 

This is a vegetarian version of posole, a dish made by Pueblos and Hispanics for

feast days and special celebrations. Serve it with sage breadsticks. Hominy is a

flavorful, chewy type of corn kernel that is treated with lime and dried. It is

available either canned, frozen, or dried. A mail-order source for hominy is Los

Chileros de Nuevo Mexico, PO Box 6215, Santa Fe, NM 87502; (505) 471-6967. You

can substitute frozen corn kernels for an even more colorful soup.

 

2 Tablespoons apple juice

1 onion, diced

3 cloves garlic, minced

4 zucchini, sliced

1 cup peeled and chopped mild green chile peppers (you can also use any color

capsicum)

6 cups vegetable broth

4 cups cooked yellow hominy (or 2 16-oz. cans) (I have only made this with

frozen corn)

1 teaspoon ground cumin

2 Tablespoons fresh chopped cilantro

 

Saute the onion and garlic in apple juice for 3-5 minutes. Add zucchini and

green chiles and cook over medium heat, stirring occasionally, another five

minutes. Add broth, hominy, and cumin and simmer, covered, over low heat for 45

minutes. Stir in cilantro and serve. I like to sprinkle a bit of cheddar cheese

on top.

Potato Leek soup was a big hit in my house.

 

5 pounds white potatoes, peeled and quartered

6 cups veg broth

2 leeks, (I used the greens and the bulbs)

1 onion

a couple cloves of garlic

carrots

GFCF margarine or Olive oil

1/4 teaspoon freshly ground white pepper

 

Saute the onions and garlic. Cooke everything else in the pot.

I put everything in the blender after it was cooked... (BE CAREFUL

taking the lid off the blender. I burnt my chin when the

potatoes " popped " after being churned...) Anyway, it's really good.

My kids eat this like they have been starved their entire life when I

make this. :)

 

We also like butternut squash & potato soup, cooked that way.

(Replace leeks with squash, and only use about 5 potatoes, and omit

the garlic & onion.)

 

Another thing I accidentally made " before the next paycheck " , that

was really good, was tossing 2 tbs of olive oil, 1 onion (chopped),

and a bit of garlic in a my rice cooker. Saute until onions are

clear. Add 1 cup of rice. Cover with onion/oil mixture. Mix for

awhile, until rice looks a little tan. Add 3 cups of veg broth. Toss

in a package lima beans and some pepper, and let it run it's cycle...

my kids realy like that, too. I think I'll be trying this more often

with different veggies. If you want it more soupy, add more

water/broth. I have been thinking of making this with mushrooms,

green beans and a little bit of coconut milk for a creamy dinner...

 

 

I also just made some tortilla soup...

soak 2 cups of beans overnight in a crock pot. (I chose black)

In the morning, rinse the beans, add enough broth & water to cover

beans.

Toss in chopped carrots, onion, garlic, taco seasoning. (I added a

can of chopped tomatoes, but you could leave those out.) I also put

in green chili peppers... not too much, if you aren't into spicey!

Cook until beans are done.

In a bowl, crunch up corn chips, pour a ladle of soup ontop. Add some

guacamole/avocado slice, and that's it. It was really good...

 

I also do a " mock " chicken and rice... Pretty much just rice,

carrots, celery, soy sauce, garbanzo beans and water or broth. The

kids really love this. It reminds me of my mom's chicken & rice, but

cruelt free :)

 

 

That's what i can think of off the top of my head. I don't usually

measure anything... I just toss stuff in a pot, and cross my

fingers :) You can't go too wrong with veggies, grains & beans. :)
