Mashed Potato Kugel with parsnips 3 pounds potatoes, peeled, chunked 1 1/2 pounds (0.68 kilograms) parsnips, peeled, chunked 1/2 cup margarine 3 cups onions, coarsely chopped 3 eggs, lightly beaten Salt, pepper to taste 1/2 teaspoon nutmeg 1/4 cup matzo meal 1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius or Centigrade). 2. Boil potatoes with the parsnips until both are tender. Drain well. 3. Sauté onions in margarine until very soft and translucent. 4. When potatoes are cool, mash with parsnips. 5. Mix in all the remaining ingredients. 6. Pour into a greased baking dish dusted with matzo meal. 7. Bake at 400 degrees Fahrenheit (200 degrees Celsius or Centigrade), 25 to 30 minutes, until top is golden. Serves 8. Nutrition Values Per Serving: Calories: 385; Fat: 14 grams; Carbohydrates: 60 grams; Fiber: 8 grams; Protein: 8 grams; Cholesterol: 111 milligrams; Sodium: 44 milligrams. It's just veggies, matzoh meal, and margarine which I assumed everyone would be using Kosher le Pesach, like Tomor. The nutmeg can be optional if you can't get it.
