cholent/Carol

I am not a big cholent fan, but I do like this. 

 

VEGETARIAN CHOLENT

 

2-3 sweet potatoes

1 large onion

1 turnip or parsnip

2 stalks celery

2 carrots

1 potato (I use 2 or three yukon golds)

1 1/2 cups mixed beans (any dried beans are fine)

1/2 cup brown rice

4-5 dates (chopped)

1 T oil

water

garlic

cinnamon (optional)

honey (I use agave nectar, but just a teeny drop)

soy sauce or braggs or tamari

salt and pepper

 

Cut vegetables into large chunks and saute in oil. Add rice, beans and water to

cover. Simmer until beans are soft (depending on the beans, this could be 1-4

hours), add dates and season to taste.

 

I have also made this in the crockpot; one of my friends uses a pressure cooker

and makes this in under an hour.

Shoshana, you mentioned the 'C' word!!!

 

Since becoming a diabetic I have tried various tweekings to my

wonderful cholent recipe but nothing seems right.

 

Could you share yours please?

 

I really miss it.

Thanks Robin, I'll give it a go. I use my crockpot for cholent or for

cooking channa dal.

You are welcome.  I just remembered that I use ginger instead of the cinnamon.
